Step into the vibrant, high-energy world of global street food! From the glowing lanterns of Asian night markets to the bustling sidewalk carts of Latin America, this 15-week course is an all-access pass to the most iconic "on-the-go" flavors on the planet. We are moving beyond the dining room and onto the streets to discover how culture, geography, and history create the ultimate "grab-and-go" culinary masterpieces. Our class follows a rhythmic, professional "Passport & Plate" two week cycle. On week A (The Expedition) we will spend time exploring the “why” behind the flavors, tracing how ancient spice routes and local landscapes created the world’s most famous street eats. During week B (The Execution) we will step into the kitchen to recreate the magic, working with authentic techniques and ingredients.
